• 1 to 2 lbs pork, cut in small cubes
  • A dash of Adobo with Pepper or Cumin
  • 2 Tbs. oil
  • 14 oz. White or Yelllow Hominy Corn
  • 1/2 cup small onion, chopped
  • 1/2 cup carrots, chopped fine
  • 1/2 cup celery, chopped fine
  • 1 to 2 cloves of garlic, minced
  • 1 Tb. oregano & 2 bay leafs
  • 1 env. Sazon Goya with Cilantro & Tomato
  • 2 chicken bouillon cubes
  • 2 quarts & 1 cup of water
  • 1 Tb. cilantro, chopped

1- Soak the Hominy in water overnight.  2- Drain water and rinse, set aside.  3- In 8 quarts soup pot heat oil  brown seasoned pork with Adobo.  4- Add garlic, carrots, and celery.  5- Cook until onion is clear.  6- Add water, bay leafs, oregano, boullion, Hominy, and Sazon.  7- Bring it to boil, cover, and turn heat to low.  8- Simmer for 45 minutes or until corn is tender.  9- Turn off heat.  10- Add cilantro for garnish.  Add more water and salt for consistency desired.

*Crock pot method. Follow steps 1-5.  Place pork mixture in crok pot and add the rest of the ingredients. Cook at desired temperture. Add more water according to consistency desired.
