3 eggs

1 cup of oil

2 cups of sugar

2 tsps of vanilla (I like Mexican Vanilla)

2 cups of grated zucchini

3 cups of white flour

1 tsp of baking soda

2 tsps of baking powder

1 tsp of salt

1 tsp of nutmeg

1 tsp of cinnamon

1/2 cup of chopped walnut

Pre-heat oven at 325 degrees. Blend eggs until light in texture. Add sugar, oil, and vanilla, and blend again. Add zuchini and blend at medium speed. Add dry ingredients to this mixture and blend. Add walnuts and blend again (I reserve 1TB. of chopped walnuts for later). Grease and flour bread pans. Pour batter in pans evenly. Sprinkle remained walnuts in each bread. Bake for 60 minutes. Insert a toothpick to check if bread is done. If it comes out clean, remove them from oven and cool off for 10 minutes before removing from pans. If it isn't, bake for 5 additional minutes. ENJOY IT!
